CassavaCassava is a tuber crop rich in available starch. Presently it is an underutilized crop for sugar production and beer production. Nigeria, Brazil, Indonesia and Thailand lead the way in its production. With pressures on the supply and demand of other starch/cereal crops, the low cost cassava represents a good potential for an alternative high yielding source of sugar for syrup extract producers, brewers, distillers, confectioners and ethanol producers. With optimal application of commercial enzymes, extracts of desired quality can be obtained from the cassava tuber.
